Ingredient:

1 ½ cups pecans

4 cups sweet potatoes

½ cup of water

½ cup dates

1 teaspoon of cinnamon

1 teaspoon of vanilla

½ teaspoon salt

¼ cup honey

Direction

  • Combine the potatoes, ½ cup of nuts, dates, cinnamon and vanilla in a processor and puree. Pour into a pyrex dish.

  • In a separate dish, mix the remaining nuts with salt and honey and then mingle with the potato mixture.

    I can't find much info on other varieties of sweet potato than the orange version. I read that lighter varieties have higher amounts of vitamin C and lower amounts of vitamin A. Do you know where I can verify this?
